Hamburger and Cheese Dip

There is no recipe for this and it’s fairly simple. I made this to enjoy with movie night in place of the nachos we were going to have last week. You can vary the heat level of it by the salsa used. Also, when we’re were over at my parents on Sunday guess what they had in their fridge?

I pulled this out and my dad said, “Yeah, there’s some of that great dip in there if your hungry.” I’m sure my mom wasn’t the first person to make this but it’s where I learned to make it.

For just the two of us I used a half pound of hamburger (along with some garlic salt and minced dried onions and chili powder) and browned the burger. While that was going I cubed about a fourth of block of Velveeta-must be Velveeta-and added some salsa. Then nuked that about a minute and a half. Stirred and cooked another minute or so till melted. After the cheese is melted and burger is not pink combine the two. Get a plate, place lots of tortilla chips on it, add dip, and then call everyone else to the table. Watch it disappear. Good stuff, Maynard!

Dinner Time

mpm.png I was sick the middle of last week-Wednesday and Thursday-and I took suppers up to my hubby’s work on Friday and Saturday. On Sunday we didn’t sleep during the day like we normally do and ended up sleeping all evening and night. Tired, weren’t we? So last week’s schedule got goofed up. I also didn’t get the ribs I wanted to-I’ve got bruises on my shins from kicking myself!

We ended our fast this morning with this feast:

This weeks menu:

Monday: Potato and Ham Soup (and maybe some rolls if I get around to making them)

Tuesday: Hearty Hash Brown Casserole

Wednesday: Beef Cube Steaks, Noodles, Veggies

Thursday: Chicken Stir Fry

Friday: Nachos

Saturday: Pork Chops (think of putting these in the Crockpot with sweet and sour sauce and some pineapple chunks), rice, veggie

Saturday: Goulash (hamburger, mac, cheese, tomatoes) probably with some cottage cheese.

Always make enough so visitors are welcome.

What’s for Dinner?

It’s reached epic proportions here in our household: must get groceries. No ifs, ands, or buts. Down to nothing. And that emptiness has nearly paralyzed me in setting the next two weeks worth of menus. With needing extras and basics-like cheese, cereal, and crackers-how do I keep the budget and yet get all the meat I need? Well, tell the hubby to suck it up is gonna be one way.

There’s a sale on country style pork ribs this week and I’m gonna pick up several pounds. I have scheduled to have them on two nights-leftovers for the second night. Also, Chris is off this Friday and Saturday to attend a Tulsa music fest known as DFest. We’ll probably be eating at one of the many bars or restaurants we go to to hear the bands. So I’ve scheduled something easy for Friday but not on Saturday. Without further adieu:

Wednesday: Chef Salad

Thursday: Country Style Ribs

Friday: Chicken Parmesan Salad

New look

The other theme I had was just too dark, wasn’t it? Trying for something lighter and I really like this. The title of my blog is Edibles and Economics and it was originally suppose to be a way for me to write about the efforts to clean my  house on top of the cooking.  I’ve been too embarrassed to release those pics.

Menu for the Week

I didn’t get the chicken I planned  on getting so the menu got rearranged. My hubby is paid on the first and the fifteenth so I actually work up so many days between-two weeks or so-and make my plan. Then to keep me on track, I post here.

Since I didn’t get the chicken last week was rather interesting. Tonight was spaghetti with leftover sauce from the meatloaf. Yesterday, I made shrimp stirfry with some shrimp I had in the freezer.

This week:

Monday Hamburgers, French fries, salad, cottage cheese

Tuesday Country Fried Steak (frozen from a bag), noodles, and a veggie

Wednesday: Pork chops-no idea what I’m going to do with them or serve with them but we will have chops.

Thursday: Frozen taquitos, melted Velveeta, Spanish Rice

Friday: Hearty Hashbrown Casserole

Saturday: Pork Chops, Veggie, Rice (the last of the chops!)

Saturday: Mazzio’s! Chris will be paid on Friday since the 15th is on a Sunday and I’m not cooking!

So there you have it. Now if I can just stick to it!

Meatloaf

When Chris and I first started dating I didn’t cook too often. Someone I worked with did me a favor and wanted meatloaf. I was a night auditor and so I made enough meatloaf for him to take home and another loaf or two for those of us working at night to enjoy. Chris was hesitant to try it-but he took a bite off of my plate. Ever since then I am begged for meatloaf at least once a month.

Not the best picture but it sure makes you wish you here I bet! Peas, radishes, baked potato and meatloaf.

So the meatloaf recipe: a pound of hamburger (per loaf pan), an egg, crushed saltines (half a ziploc bag or so), a dash or two or Worcester sauce,  and about a fourth a jar of spaghetti sauce. This all is for a pound of beef, adjust accordingly. Mix well, with bare hands, and place in loaf pans and bake in a 350 oven for about an hour. Since the oven was going to be on, I went ahead and threw the potatoes in there. Then it was just warm up some peas and slice the radishes a few minutes before it was all done.

Oh and see that measly little bit I got-that’s all I got. My husband ate the rest of the loaf pan. He will pay for this-no meatloaf sandwiches alone could be grounds for divorce! Nah-I will make him pay in other ways!

Anyhoo-that’s about it  for this weekend. Tomorrow it’s pork chops, mashed potatoes and a veggie. Already looking forward to that!

Nacho Dip

This week we haven’t followed the menu plan too well. We did have meatloaf tonight. Or rather, I got a slice and my hubby ate the rest of it. And I wanted meatloaf sandwiches later. Tuesday night I made nacho dip-my own recipe-and Monday we didn’t eat supper!

The picture isn’t that great but you get the idea-and the only reason it’s in this pan is because my pie pan is in my car. Don’t ask.

I took a can of refried beans and nuked in a bowl for about two minutes.

I took about 3/4 pound of ground beef and browned in a skillet with minced onion, garlic salt, red and green pepper flakes, and pepper.

Once the hamburger was no longer pink I drained. Spread the  beans in the bottom of pan, top with the hamburger, then diced tomatoes, lettuce, black olives, sour cream, salsa. Then lots of cheese. Set on the coffee table with a bag of Tostitos and a large glass of ice tea. Great with a movie :)

No set amounts-use what you would on a taco and feel free to mix the sour cream and salsa then drizzle over. I was just too lazy.

Menu Plan

We did decent following the plan last week. We have had recipes here lately that aren’t new or even with a recipe so no new pics. The next couple of weeks, I’m just going to have to post what we ate for supper pics. I’ve got to be frugal with the grocery budget and so I dug deep in the freezer and fridge trying to find out what I had and what I could do with it. I found some Reames frozen egg noodles-hey lets have homemade chicken noodle soup! That sorta thing and I plan and buy for two because the hubby gets paid on the 1st and the 15th. So it’s a real basic plan for the next two weeks: meat, starch, and veggie.

Monday: Chicken fried steak (from a frozen bag!), stuffing, veggie

Tuesday: Eat out

Wednesday: Meatloaf, Baked potatoes, veggie

Thursday: Chicken soup, rolls

Friday: Pork chops, potatoes, veggie

Saturday: Chicken Parmesan pasta salad

Sunday: Tacos

So the menu is up on the whiteboard on my pantry and we’re ready for another week. Well, as soon as we hit the grocery store. Oh,head on over to Laura at Organizing Junkie for menus!
