Supper Woes

Supper’s have been edible but not repeatable. If that’s a word. I’m going 2 for 2 with serving just so-so meals here lately.

Friday night I had schedule the Farmhouse Chicken. I chose this recipe because I thought my hubby likes stuffing. I don’t generally care for stuffing. Will not eat it at Thanksgiving/Christmas. It’s wet bread-how gross. But the Chicken gets baked with the stuffing as a topping and I thought it would be okay. We both just picked at it-and then the hubby tells me he’s not a huge stuffing fan. Well, then. This was good-be something different if you like stuffing. Just not our thing. The hubs did say it would be okay once in a while-but I’m tossing the recipe. Life’s just too short. Sorry, Tammy!

Then tonight we had the Mashed Potato Taco Casserole. It was just okay again. In fact, I will probably toss the leftovers without trying to save them. Now I made some instant potatoes at home, combined with egg and cheese. Cut the meat down to about 1/2 lb and used a full envelope of taco seasoning. This created fire! So we got the sour cream out to help with the heat. So if you cut it in half, cut the seasoning also!

Tomorrow we are trying some Chinese Lemon Chicken. So hopefully that turns out. How’s your suppers going?

Food Lovin’

We had this Apricot Glazed Chicken for supper tonight. I added some red bell pepper I had in the fridge to the chicken in the beginning. Served over couscous and a side of peas. My husband didn’t eat supper he had food s*x! This quick and easy dish is going in the the keeper file and it will be easy to keep most ingredients on hand as we usually have chicken in the freezer. As for the apricot marmalade that can be kept in an bottom door shelf for the next round. So very good.

I’ve got spaghetti lined up for tomorrow night. Since it’s just the two of us I’ll use 1/2 pound of hamburger and 1/2 jar of spaghetti sauce. The left over sauce will go in the freezer for the next week. Perhaps I can get some hamburger to make some meatloaf-the hubs will love that.

I’ve got like 600 saved recipes on del.icio.us.

And since the link likes to go on and on-here’s the rest of my thought. I bookmark those recipes I’m going to try with the tag “makethisweek.” Makes it so much easier at supper time to go in and find those recipes to write down. And yes, I do get pen and paper out and write it out. This way I read the whole recipe and able to put it into my own words. Some things I don’t need explicit instructions on-like making a white sauce-and some times I need the more detailed list. Hey, it works for me!

The AWOL Cook

I have been cooking it’s just been real basic things. Like spaghetti and  tacos. Who needs a recipe? I did try the Southwestern Skillet Bake from Betty Crocker tonight with great results. I did add a packet of taco seasonings like some commenter’s said to try. I served with sour cream on the side (or top) and I really liked it. In fact, I may try this with rice to make it truly one dish side needing only a salad.

I got some pictures of my peanut butter cookies but I wouldn’t bet on those being uploaded any time soon :D Lazy blogger! Well, time to do the dishes since the hubs went to work. Ciao!
