Chicken in a pot

Supper haven’t been that interesting around here. Saturday evening it was pork chops (baked in a 350 oven for about an hour with a little Worcester sauce, soy sauce, onions and a touch of water), smooshed potatoes, and cabbage (fried in water on the stove till limp). We had a party on Sunday so it was a nibble night. Yesterday I had chicken I needed to cook up so I put it in the crockpot with a jar of peach-mango salsa. Serve with mixed veggies and rice and it turned out to be a pretty good dinner.

Chris starts his new schedule today. He’ll be working 1-11 pm Tuesday-Friday. So instead of dinner we will be having our big meal at noonish. Today it’s pork chops again (and left over cabbage!). This will work with his indegestion also. So that’s what’s up over here.

We’ve grabbed dinner out the past two nights. And the budget  won’t handle much more of this. I wish I could say that I’ve made something here lately. But three nights ago’s dinner? No idea what we had to be honest. So here’s hoping for something good tonight…

New Year…New Posts

I haven’t been the best food blogger I know. Suppers have been fairly easy, fairly simple, and my weekly menu gets changed. But that’s ok. New Year and I am going to make an effort to post more often.

I work in a public library and we have been weeding our collection here recently. Weeding involves taking out of circulation anything that is damaged or stained. I have managed to bring home a lot of books this way.  My cookbook collection has grown exponentially this way. I have set out just a few cookbooks, my small pamphlets, and  a few specialty cookbooks to start working my way through. I also have a huge amount of photo copied, printed, or magazine recipes in a file box. Plus the 1500+ Delicious bookmarks and counting. It’s enough to make anyone crazy :)

So tonights dinner was called Ground Beef Stew over Garlic Mashed Potatoes. This is from a Pillsbury magazine I had. The reviews general come up as fabulous. I thought it was filling but not spectacular. Husband liked it. So I am adding these notes: too much garlic, make a batch of 4 serving potatoes and add garlic, and the stew needs something. Perhaps less tomatoes or different type of tomatoes. Perhaps some with flavoring. I’ll hang on to it to try down the road.

I have laid down hamburger and quite possibly it will be Velveeta cheese/salsa/browned hamburger over tortilla chips. Or I could go something totally different. Not quite sure yet. The nachos would be easy after I get off at 9 pm. So we will see.

Another thing-we moved in November. I said goodbye to my galley kitchen and hello to some counter top space. Now if I could just get another stove I would be really happy. The oven is 50 degrees off and one burner is useless. After tax time I will be going through Craig’s list praying for one!
